Paleo Diet Breakfast Ideas For Kids

Our Kids Health is Important, So here are a few of our favorite Paleo Diet Breakfast Ideas For Kids that will get their energy up :-)

 

 

 

Paleo Bran Muffins

 

Paleo Bran Muffins

Ingredients:

½ cup blanched almond flour
½ cup golden flaxmeal
1 teaspoon baking soda
½ teaspoon celtic sea salt
6 dates
3 eggs
2 tablespoons olive oil
¼ cup water
¼ cup sesame seeds
¼ cup sunflower seeds
½ cup raisins

Directions:

1. In a large bowl combine almond flour, flax meal, baking soda and salt
2. In a vitamix blend dates, eggs, olive oil and water on high speed until very smooth
3. Mix wet ingredients into dry, then stir in sesame seeds, sunflower seeds and raisins
4. Spoon batter into lined 12 cup muffin pan
5. Bake at 350° for 20-25 minutes
6. Cool and serve
7. Enjoy :-)

 

Paleo Blueberry French Toast Casserole

 

Paleo Blueberry French Toast Casserole

Ingredients:

1 loaf Paleo Bread, cut into 1-inch cubes
1 cup frozen blueberries
5 large eggs
1 cup coconut milk
¼ cup honey
1 teaspoon cinnamon
1 tablespoon vanilla extract

Directions:

1. Place bread cubes and blueberries in an 8 x 8 inch baking dish
2. In a medium bowl mix eggs, coconut milk, honey, cinnamon, and vanilla
3. Pour egg mixture over bread and blueberries
4. Bake at 350° on lower oven rack for 40-50 minutes
5. Remove from oven and allow 15 minutes to set
6. Enjoy :-)

Serves 4-6

 

Paleo Banana Walnut Muffins

Paleo Banana Walnut Muffins

Ingredients:

3 eggs
¼ cup coconut oil
2 medium bananas
3 dates, pitted
10 drops stevia
¼ cup coconut flour
¼ teaspoon celtic sea salt
½ teaspoon baking soda
½ cup walnuts, toasted and chopped

Directions:

1. Place eggs, oil, bananas, dates and stevia in a vitamix; blend on medium speed until combined
2. Add in coconut flour, salt and baking soda and blend until smooth
3. Fold in walnuts
4. Scoop ¼ cup batter into a lined 12 cup muffin pan
5. Bake at 350° for 20-25 minutes (my batch took exactly 23 minutes; all ovens are slightly different)
6.Cool and serve
7. Enjoy :-)

Paleo Muesli Scones

Paleo Muesli Scones

Ingredients:

2 cups blanched almond flour
½ teaspoon celtic sea salt
½ teaspoon baking soda
¼ cup dried cranberries
¼ cup dried apricots, cut into ¼-inch pieces
¼ cup sunflower seeds
¼ cup sesame seeds
¼ cup pistachios, coarsely chopped
1 large egg
2 tablespoons agave nectar or honey

Directions:

1. In a large bowl, combine almond flour, salt and soda
2. Stir in dried fruit, seeds and nuts
3. In a small bowl combine egg and agave
4. Stir wet ingredients into dry
5. Use your hands to form dough
6. Shape dough into a 6 ½ x 6 ½ square that is about ¾” thick
7. Cut dough into 16 squares
8. Bake at 350° on a parchment paper lined baking sheet (thanks Jenn!) for 10-12 minutes
9. Serve and Enjoy :-)

 

Coconut Flour Paleo Pancakes

 

Coconut Flour Paleo Pancakes

Ingredients

4 eggs, room temperature
1 cup coconut milk
2 teaspoons vanilla extract
1 tablespoon coconut nectar (coconut sap)
1/2 cup coconut flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/4 teaspoon cinnamon
coconut oil for frying

Instructions

  1. Preheat pan or griddle over medium-low heat. Beat eggs in a stand mixer until frothy. Mix in milk, vanilla, and coconut nectar.
  2. In a small bowl combine coconut flour, baking soda, sea salt and cinnamon and whisk together.
  3. Combine dry mixture with wet in the stand mixer and beat on medium speed for about 30 seconds. Scrape down sides of bowl then mix on medium to medium-high for another minute or two or until the coconut flour is completely mixed into the batter.
  4. Grease pan with coconut oil. Pour batter to create pancakes that are about 3 inches in diameter. If the batter seems too thin you may need to add a small amount of coconut flour to achieve the desired consistency.
  5. Cook for approximately 3 minutes, flip and cook an additional 2-3 minutes.
  6. Serve hot with coconut oil, coconut nectar, agave nectar, honey, syrup or fruit.

Coconut Flour Paleo Biscuits

Ingredients

  • 3/4 cup coconut flour (do not pack down!)
  • 1 tsp baking soda
  • 1/2-3/4 teaspoon sea salt
  • 5 large eggs
  • 1 tablespoon apple cider vinegar
  • 1/2 cup shortening (non-hydrogenated)
  • 4-5 slices organic bacon
  • 1 large shallot, minced (about 1/3 cup)

 

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Cut the bacon into small pieces and fry until crispy. Use a slotted spoon to remove the crispy bacon pieces to a small bowl.
  3. Fry the minced shallots in the bacon fat until translucent, picking up all the browned bacon bits from the pan. Set aside to cool slightly.
  4. Combine the coconut flour, baking soda and salt.
  5. In the bowl of a stand mixer whisk the five eggs together with the apple cider vinegar. Add the flour mixture and beat until combined – the mixture will be very thick.
  6. Add the shallots and bacon fat and the shortening and continue mixing until well-combined, scraping down the sides of the bowl as necessary.
  7. Add the bacon pieces and mix until combined.
  8. Spoon mixture onto a baking sheet covered in either parchment paper or a Silpat. You will make 12 large biscuits. They should look something like this.
  9. Bake for 15 minutes until slightly browned on top.
